Raspberry Ginger Glazed Salmon

INGREDIENTS

Marinade Recipe

¼ Cup    Olive Oil

2T           Sesame Oil

2T           Rice Vinegar

2T           deb’s Raspberry Pepper Jelly

2T           Soy Sauce

2             Garlic Cloves – Grated

1T           Fresh Ginger – Grated

 

2-4         Portions of Salmon (1-1½ Pounds)

 

Salmon Finishing Glaze (for 2)

1T           Sesame Oil

3T           deb’s Raspberry Pepper Jelly

1T           Soy Sauce

1T           Fresh Ginger – Grated

½ T         Toasted Sesame Seeds

INSTRUCTIONS

Marinade

  1. Place marinade ingredients in a bowl and whisk to combine.

  2. Place 2-4 portion cut salmon pieces in a zip bag.

  3. Pour marinade over Salmon and marinate for 30 mins or longer

Indirect Grilling Method

  1. Spread lit charcoal in two piles on opposite ends of the grill

  2. Arrange Salmon on a sheet of aluminum foil in middle of grill with no charcoal underneath.

  3. Grill for 15 minutes

Salmon Finishing Glaze – Double for more than 2 people

  1. Add Sesame Oil to a hot pan

  2. Add remaining ingredients and whisk to combine

  3. Cook and reduce for 2-3 minutes

  4. Serve Salmon with the hot glaze poured over the top
